{"id":5878,"date":"2019-12-30T22:28:26","date_gmt":"2019-12-31T03:28:26","guid":{"rendered":"http:\/\/k-line.org\/9\/?p=5878"},"modified":"2019-12-30T22:30:47","modified_gmt":"2019-12-31T03:30:47","slug":"potato-latkes","status":"publish","type":"post","link":"https:\/\/k-line.org\/9\/2019\/12\/30\/potato-latkes\/","title":{"rendered":"Potato Latkes"},"content":{"rendered":"\r\n<p>The basic Latke recipe includes simple ingredients: potatoes, onions, eggs, matzo meal or all-purpose flour, salt and oil.\u00a0 Traditionally, Germans eat their pancakes with applesauce.<\/p>\r\n\r\n\r\n\r\n<p><span style=\"text-decoration: underline;\"><strong><span style=\"color: #800000; text-decoration: underline;\">Ingredients<\/span><\/strong><\/span><\/p>\r\n\r\n\r\n\r\n<ul>\r\n<li>3 medium potatoes. grated<\/li>\r\n<li>1 medium onion, chopped<\/li>\r\n<li>3 large eggs<\/li>\r\n<li>9 tablespoons matzo meal (substitute a dozen salt free saltine crackers, rolled in plastic bag until the consistency of course corn meal)<\/li>\r\n<li>\u00bc teaspoon salt (optional)<\/li>\r\n<li>\u00bc teaspoon ground black pepper<\/li>\r\n<li>vegetable oil<\/li>\r\n<\/ul>\r\n<p><span style=\"text-decoration: underline;\"><strong><span style=\"color: #800000; text-decoration: underline;\">\r\n\r\n<\/span><\/strong><\/span><\/p>\r\n<p><span style=\"text-decoration: underline;\"><strong><span style=\"color: #800000; text-decoration: underline;\">Instructions<\/span><\/strong><\/span><\/p>\r\n\r\n\r\n\r\n<ol>\r\n<li><strong>To prepare the Lathes:<\/strong> Place small batches of grated potatoes in the center of a dish towel, gather up the sides of the towel, and wring excess liquid from the potatoes. Transfer potatoes to a large bowl and repeat with the remaining potatoes. Add onion, eggs, matzo meal (crushed crackers), \u00bc teaspoon salt, and \u00bd teaspoon pepper to the potatoes, mix well, and set aside.<\/li>\r\n<li>Heat \u00bc inch of oil in a 12-inch skillet over medium heat. Add the potato mixture by the \u00bc cupful to the hot oil, lightly flatten pancakes with a spatula, and cook latkes until golden, about 5 minutes. Turn over and cook until heated through and golden brown, about 5 more minutes. They originated in the eastern European countries of Germany Austria, Russia and Poland as a peasant food. Potatoes were cheap, plentiful and easy to store, making them a staple and necessitating inventive potato recipes.
